Adventures in the Kitchen: Spaghetti With Sauteed Chicken And Grape Tomatoes

Here it is lovelies, the first meal ever cooked in my new home! I love the smell of garlic, and this recipe left the smell lingering in the air- YUM! This was a pretty simple and fast meal to prepare- with lots of possibilities to add and make it your own.

Spaghetti With Sauteed Chicken And Grape Tomatoes

Serves: 4

2 skinless chicken breast halves
1/2 tsp each of dried oregano and dried basil
kosher salt and fresh pepper
8 oz spaghetti (high fiber or low carb)
2 cups grape tomatoes, halved
6 cloves garlic, smashed and coarsely chopped
(I use the jar of already chopped garlic)
4 tsp extra virgin olive oil
4 tbsp chopped fresh basil
** Italian Seasoning
** Jarred Artichoke Hearts

Bring a large pot of salted water to boil.

Cut chicken into one inch cubes. Season chicken generously with salt, pepper, oregano and basil (I added Italian seasoning- it has most of the same seasonings mentioned here). Heat a large skillet on high heat. When hot, spray with oil and add chicken. Cook about 3-4 minutes, until no longer pink. Remove chicken and set aside.

Add pasta and cook according to package directions. Reserve about 1/2 cup pasta water before draining.

While pasta cooks, add olive oil to skillet on high heat. Add garlic and sauté until golden brown (do not burn). Add tomatoes (I also added jarred artichoke), salt and pepper and reduce heat to medium-low. Sauté about 4-5 minutes. When pasta is drained, add pasta to tomatoes and toss well. If pasta seems too dry, add some of the reserved pasta water. Add fresh basil and chicken and toss well. Serve and top with good grated cheese.

I liked this recipe for two reasons:
  1. It was healthy and simple
  2. It was easy to modify (notice I crossed off all salt. I'm kinda a sodium nazi)
TK was able to take his bowl and add in all the extra cheese and olive oil that he wanted, while I preferred to leave mine as is :)
