Vanilla Almond Blueberry Crumb Bars

With a surplus of blueberries, I needed a recipe to help me use them up. Thank's to Pinterest I was able to locate one in record time!

Vanilla Almond Blueberry Crumb Bars

Servings: About 9 bars

Ingredients 
1 egg white
½ cup butter, softened
¼ cup packed brown sugar
½ teaspoon almond extract
1¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1½ cups Bear Naked Fit Vanilla Almond Crunch Natural Granola
1¼ cups frozen blueberries
¼ cup sugar

Instruction:
  • Heat oven to 375°F and grease an 8×8 inch pan
    (I used a 3qt oblong pan but my bars were a little too thin, next time I will double the recipe)
  • In a large bowl mix together egg white, butter, brown sugar, and almond extract with a spoon until creamy.
  • Mix in the flour, baking powder, and baking soda. Then stir in granola. It will be the consistency of dough. 
  • Press about 2/3 of the dough into the bottom of the pan, making a thin crust.
  • In a medium bowl, mix the blueberries and sugar and then spoon over the dough keeping the blueberries about ½ inch from the edges.
  • Crumble the remaining dough over the berries
  • Bake for 25 to 30 minutes or until golden brown. 
Let cool completely, if you can wait that long! It smells heavenly! Definitely a great treat to bring into work!
